This high-protein buffalo chicken dip uses blended cottage cheese for a creamy, guilt-free twist. Packed with flavor and nutrients, it’s a healthy game day favorite that satisfies without the heaviness of cream cheese.
Ingredients
1.5 cups cottage cheese (blended until smooth)
1.5 cups shredded cooked chicken (rotisserie or baked)
0.5 cup hot sauce (like Frank’s RedHot)
0.5 cup shredded cheddar cheese
0.25 cup plain Greek yogurt (optional, for extra creaminess)
1 tsp garlic powder
Salt and pepper to taste
Chopped green onions (for garnish)
Instructions
1. Blend the cottage cheese in a food processor or blender until completely smooth, with no visible curds.
2. In a medium saucepan over medium heat, combine the blended cottage cheese, Greek yogurt (if using), and hot sauce.
3. Stir in the shredded chicken, garlic powder, and shredded cheddar cheese.
4. Cook over medium heat for 5–7 minutes, stirring frequently, until hot and melted.
5. Season with salt and pepper to taste, then garnish with chopped green onions.
6. Serve hot with celery sticks, crackers, or sliced bell peppers. Or cool and use as a sandwich spread.
Notes
For a creamier version, blend the cottage cheese with a spoonful of Greek yogurt. Adjust spice level by using different hot sauces or adding cayenne. To keep dip creamy, don’t boil—heat gently. Serve hot or cold. Leftovers make a great sandwich spread.
