Crunchy Almond Coconut Granola

At home we eat a lot of porridge for breakfast. So that the breakfast is not boring, the toppings for the oatmeal are of course super important. In addition to fresh fruit and nut butter, granola must not be missing. We have a selection of homemade granolas. Today I present you my crunchy almond coconut granola.

Please keep in mind that I’m only presenting you with one variation here. The composition changes regularly with me. Depending on what seeds and nuts I have in stock in the house.

So let’s get started! First, of course, you need (gluten-free) oatmeal. Then you need seeds of your choice. I chose sunflower seeds and flax seeds here. But you can also use pumpkin seeds and sesame seeds. Then, of course, add almonds. I have taken planed, but it can also be taken slivered or chopped.

A portion of cinnamon should not be missing. For the sweetness I take agave thick juice. Here, too, you can take the sweetness of your choice: Maple syrup, rice syrup, date syrup, etc.

So that the muesli is also nice and crunchy, add a little fat. I take coconut oil for this. But you can also take tasteless vegetable oil.

Then I mix everything together, spread the mixture on a baking tray lined with baking paper and bake everything until golden brown. While the granola is in the oven, it needs to be stirred from time to time.

When the granola is done baking, I let it cool. At the end, I add the coconut flakes and coconut chips. Please make sure they are unsweetened.

Then everything is mixed again and ready is your crunchy almond coconut granola! Store the granola dry in a large storage jar.

Ingredients

  • 1 cup natural quick oats

  • 1 cup sliced almonds

  • 1 cup old fashioned oats

  • 1/2 cup flaxseed

  • 1 cup sunflower seeds

  • 1 tsp cinnamon

  • 3 Tbsp. agave syrup

  • 1/2 cup coconut oil

  • 1 cup unsweetened coconut flakes

  • 1/2 cup coconut Chips

Directions

  • Mix all the ingredients together except for the coconut flakes and chips.
  • Bake the granola mixture at 175ºC. I bake my granola for about 15-20 minutes. Depending on your oven and browning preference, the baking time will vary. Keep checking in and mixing the granola.
  • After you are satisfied with the browning, take the granola mixture out of the oven and add the coconut flakes and chips at the end.
  • Store your finished granola in a sealable container.
