Super quick to make, delicious and healthy. Loose couscous with bell bell pepper vegetables. The couscous gets a special kick from the sweetness of dates and the spiciness of garlic dip.

Ingredients

  • 2 small cups of couscous

  • A handful of cashew nuts

  • 2 red onions

  • 2 bell peppers

  • 2-3 dates

  • Handful of parsley

  • 1 Tbsp. vegetable broth

  • Boiling water

  • Salt

  • Pepper

  • Garlic Dip
  • 100g vegan creme fraiche or sour cream

  • 1 clove of garlic

  • 1 tbsp. parsley

  • 1 tsp paprika seasoning

  • 1 tsp flaxseed oil

Directions

  • Place couscous in a bowl with a tablespoon of vegetable broth.
  • Boil water. Pour the boiling water over the couscous. Let the couscous rest.
  • Dice the bell peppers, onions and dates. Chop the cashew nuts.
  • Roast the cashews in a pan without oil.
  • Fry the onions with a little oil. When they turn brown, add the peppers. Fry everything for 3 minutes. Season with salt and pepper.
  • Add the dates and parsley. At the end add the cashew nuts.
  • Fluff the couscous with a fork.
  • Press the garlic clove for the dip. And mix all the ingredients for the dip together.
  • Arrange the couscous with the vegetables and eat the dip with it.
