Ingredients
2 small cups of couscous
A handful of cashew nuts
2 red onions
2 bell peppers
2-3 dates
Handful of parsley
1 Tbsp. vegetable broth
Boiling water
Salt
Pepper
- Garlic Dip
100g vegan creme fraiche or sour cream
1 clove of garlic
1 tbsp. parsley
1 tsp paprika seasoning
1 tsp flaxseed oil
Directions
- Place couscous in a bowl with a tablespoon of vegetable broth.
- Boil water. Pour the boiling water over the couscous. Let the couscous rest.
- Dice the bell peppers, onions and dates. Chop the cashew nuts.
- Roast the cashews in a pan without oil.
- Fry the onions with a little oil. When they turn brown, add the peppers. Fry everything for 3 minutes. Season with salt and pepper.
- Add the dates and parsley. At the end add the cashew nuts.
- Fluff the couscous with a fork.
- Press the garlic clove for the dip. And mix all the ingredients for the dip together.
- Arrange the couscous with the vegetables and eat the dip with it.
