Salad belongs to every main course with us. Because a salad makes the whole meal simply fresher and it makes happy. I love especially salad from combinations with vegetables, fruits and nuts or seeds. Just like in this recipe of my lambs lettuce with oranges and walnuts. One of my favorite salad recipes!

Lambs lettuce with Oranges & Walnuts

My lambs lettuce with oranges and caramelized walnuts is a super salad for winter. Because lamb’s lettuce grows in low temperatures and is in season during the cold season. The cold weather enhances the nutty flavor of lamb’s lettuce. I look forward to the season every year as lamb’s lettuce is one of my favorite types of lettuce. It is not as watery as other lettuces and has a mild but nutty flavor. This makes the salad particularly versatile. Lamb’s lettuce goes well with savory flavors, but also pairs well with sweet flavors. Like here in my recipe.

I didn’t try anything crazy with the dressing, it’s a very simple vinegar, oil dressing with a slight mustard note. What makes a good salad dressing for me? It has to have a sweet, a sour, a bitter and a salty note. In this recipe, I chose a raspberry vinegar for the sour note. However, the dressing can be made just as well from balsamic dressing or you can use the juice of the oranges.

As I mentioned before, for me, every salad includes either nuts or seeds. Both nuts and seeds are healthy sources of fat and contain protein. They have many undeniable health benefits. So feel free to try incorporating more nuts and seeds into your diet. They also make great toppings on cereals or pasta dishes. This way you get all the good ingredients: fiber, protein, vitamins and healthy fatty acids.

Please be sure to choose natural nuts and seeds here. So no salted or sweetened. If you want them sweet, do as I do in this recipe and caramelize your nuts yourself. That way you can decide how much sweetness you want with your nuts.

Ingredients

  • 150g Lamb’s lettuce

  • 2 Oranges

  • 2 Handfuls Walnuts

  • 1 Tsp. Agave Syrup

  • Dressing
  • 2 Tbsp. Fruit Vinegar

  • 5 Tbsp. Olive Oil

  • 1/2 tsp Mustard

  • 2 tsp Agave Syrup

  • Salt

  • Pepper

Directions

  • Mix all ingredients for the dressing together.
  • Wash the lamb’s lettuce and dry it.
  • Peel the oranges and cut them into small pieces.
  • Chop the walnuts coarsely. Put them in a pan without oil and roast. When they start to turn brown, add 1 tbsp. of agave syrup and continue roasting briefly.
  • Mix the lamb’s lettuce, oranges and walnuts together and then add the dressing.
