1 liter of plantmilk
100 g soft wheat semolina
1 package of instant vanilla pudding powder
3 tbsp maple syrup (or other sweetener)
2 handfuls of blueberries
1 tbsp cornstarch
4 tbsp water
- Stir the pudding powder with some plant milk until smooth.
- Boil the plant milk.
- Add the pudding and let it boil briefly, stirring constantly, until the milk thickens.
- Stir in the semolina.
When you have mixed everything, you can turn off the heat and let it rest for 10 minutes.
- Mix the cornstarch with 3 Tbsp. water.
- Heat the frozen blueberries with a Tbsp. of water.
- Stir in the cornstarch and bring to the boil until the compote has thickened a bit.
