This light vanilla semolina pudding with blueberries is super delicious. It brings variety to your breakfast table and is also good for your next brunch. You only need a few ingredients. It is super quick and easy to make.

Ingredients

  • 1 liter of plantmilk

  • 100 g soft wheat semolina

  • 1 package of instant vanilla pudding powder

  • 3 tbsp maple syrup (or other sweetener)

  • 2 handfuls of blueberries

  • 1 tbsp cornstarch

  • 4 tbsp water

Directions

  • Stir the pudding powder with some plant milk until smooth.
  • Boil the plant milk.
  • Add the pudding and let it boil briefly, stirring constantly, until the milk thickens.
  • Stir in the semolina.
    When you have mixed everything, you can turn off the heat and let it rest for 10 minutes.
  • Mix the cornstarch with 3 Tbsp. water.
  • Heat the frozen blueberries with a Tbsp. of water.
  • Stir in the cornstarch and bring to the boil until the compote has thickened a bit.
