Vegan egg alternatives for baking and cooking
The biggest concern with vegan baking is the lack of egg as a binding agent. But there are great alternatives for the missing egg! For example, flaxseed, chickpea water, banana, chia seeds, corn starch, chickpea flour, or even oatmeal make great egg alternatives. In this cake recipe, the baking powder provides the binding. For cake bases, I use mostly whipped chickpea water (aquafaba). For pancakes, I prefer to use banana or chickpea flour.
In this recipe, I’ll introduce you to my basic chocolate cake recipe. It always works for us and can be modified if needed. For example, other nuts can be added or cherries and other fruit. Especially fruit makes the cake very tasty, because it makes it even juicier.
The vegan chocolate cake is based on a brownie recipe. It is important not to bake it too long or it will become crumbly and dry. Of course, you don’t want that. You want your cake to be nice and moist.
The frosting for the cake is also super quick to make. All you need is powdered sugar, unsweetened cocoa powder, some vegan butter and plant milk. If you don’t have powdered sugar, you can also use regular sugar and mix it in a blender. This way you can easily make your own powdered sugar and it’s even cheaper.
Vegan Chocolate Cake with Almonds

250g Flour
50g unsweetened Cocoa Powder
1 tbsp. Baking Powder
350ml Plant Milk
150g Sugar
80ml Vegetable Oil
1 Tbsp Apple Cider Vinegar
1 tsp. Vanilla
1 tsp Baking Soda
1 tsp Salt
1 cup slivered Almonds
- Frosting
70g powdered sugar
1 Tbsp. Almond Butter
2 Tbsp. unsweetened Cocoa Powder
1 Tbsp. Vegan Butter
1 Tbsp Plant Milk
Directions
- Mix flour, baking powder and cocoa powder together.
- Whisk together plant milk, vegetable oil, sugar, vanilla, baking soda, salt and apple cider vinegar until smooth.
- Sift dry ingredients into wet batter and stir until smooth.
- Add the almonds to the batter at the end. Save some for later.
- Grease a cake pan and pour the batter into it. Bake the cake at 170ºC for about 35 minutes.
- Frosting
- Mix all the ingredients for the frosting and spread on the baked cake.
- Sprinkle the remaining almonds on the wet frosting.
