This recipe is my variation of muhammara. Muhammara is a spicy seasoning paste of Arabic cuisine made from roasted peppers and walnuts. So this is not the original, but my personal vegan variation.

The spread consists of roasted red peppers, garlic and walnuts. The roasting creates an incomparable flavor. The perfect consistency of the vegan spread comes from adding bread crumbs.

I chose cumin, salt, pepper and chili flakes for seasoning. The chili flakes make the dip pleasantly spicy. Of course, you can use your own amount of chili here. Because everyone has a different spiciness tollerance.

In addition, the vegan muhammara spread still needs a sour and a sweet component. I opted for balsamic and date syrup. But you can also use alternatives here. For example, sweet balsamic cream or a mixture of maple syrup and fruit vinegar.

Ingredients

  • 3 Red Bell Pepper

  • 2 Bulbs Garlic

  • 1/2 Cup Walnuts

  • 1/3 Cup Olive Oil

  • 1 Tbsp. Cumin

  • 1/2 Tbsp. Chili flakes

  • 1/2 Tbsp Salt

  • 2 Tbsp Date syrup

  • 2 Tbsp. Balsamic vinegar

  • 1/2 Cup Bread crumbs

Directions

  • Roast the peppers and garlic bulbs in the oven. The skin of the peppers should darken, so you can easily remove the skin afterwards.
  • Roast the walnuts in a pan or in the oven.
  • Remove the skin from the peppers, squeeze out the garlic bulbs.
  • Put the peppers, garlic and walnuts in a blender with the spices and bread crumbs and blend until smooth.
