This Mounjaro-inspired breakfast bowl is a nourishing blend of fiber-rich sweet potatoes, leafy greens, protein-packed egg, and healthy fats from avocado — all designed to balance blood sugar and keep you full naturally.
Ingredients
1 cup roasted sweet potatoes, cubed
1 cup sautéed spinach
1 poached egg
0.5 avocado, sliced
1 pinch sea salt
1 pinch turmeric
Instructions
1. Roast sweet potato cubes at 400°F (200°C) for 20–25 minutes until golden and soft.
2. Sauté spinach in a skillet with a splash of water or olive oil until wilted, about 2 minutes.
3. Poach the egg in gently simmering water for 3–4 minutes or to desired doneness.
4. Assemble the bowl: layer sweet potatoes, sautéed spinach, poached egg, and sliced avocado.
5. Sprinkle with sea salt and turmeric. Serve warm.
Notes
